GX460 is the “North American spec” Land Cruiser Prado, a URJ150. It’s very, very similar to a 5th-gen 4runner but with less fancy/luxo bits.
The previous GX was a 470, also known as a UZJ120, nearly identical to the 4th-gen 4runner and the Prados. HHFP presently has one.

People who have a 460 and the older 470 generally keep the 470. Main complaints are the newer seats are worse, and more plastic on the interior. 3rd row also isn’t removable on the 460

I don’t understand your line of thinking.
You say you want something manageable size for urban areas but more room inside than a GTI, so you come up with Touareg. The Touareg is 188.8” long, 76.4” wide, 68.2” tall and weighs 4,696 lbs. It does 17/19/23 mpg on regular fuel.
For the criteria which led you to the Touareg, the GX is going farther in the wrong direction. It’s larger in almost every dimension (except a couple inches narrower), it weighs a whopping 5198 lbs, it gets 15/16/18 mpg on premium. Because it’s a truck, it’s not at all space efficient on the inside, and it drives like a truck, because again, it is a truck.
The Touareg already didn’t make sense for what you said you want/need and the GX is a much worse choice, even if its 3rd owners love it because it’s a fancified Prado.
Why oh why are you not considering the more practical, compact-ish CUVs? Even among the luxury brands there are
plenty
of choices.

192 inches long isn’t horrible, and the ability to transport 7 passengers occasionally (2nd row with 2 baby seats) in a package smaller than most 3row subs is the selling point. Gas mileage for either car doesn’t matter since most drives are 2-3 miles each way. The 2018 sq5 is the other consideration, but it’s footprint isn’t that much smaller. Plus, this Prado would last a good 8-10 years easy

GX third row seat is a joke.
SQ5 is much more in line with what I’d want although personally I like the X3 35i.
But really everything you’re saying feels to me like cars a car guy would pick for his wife based on what he likes and without much input from his wife or much consideration of how the car is actually going to be used.
I say this as a married car guy with a wife who tolerates my silly hobby (and even laughs at the silly whooshy whistly turbo noises my car makes) but has very different priorities when it comes to what she wants for her car. Because if I were to pick a car for what my wife needs plus what I like, it would be an X3 35i M Sport with dynamic handling package, but she actually drives a loaded Impreza hatchback. And the Impreza is a much better choice for her if I’m being honest about it.
You should seriously consider the Acura RDX and Lexus NX. Both of them make so much sense for what you’ve described. Neither has a 3rd row but the NX can be had as a hybrid which IMHO is perfect for the low mostly-city mileage.
You should decide now whether a 3rd row is something you definitely want because that changes the choices a lot.
